GB/T 35994-2018 is the English-translated version of 粮油机械 面团拉伸仪.

This standard was drafted in accordance with the rules given in GB/T 1.1-2009.
1 Scope
This standard specifies the terms and definitions, working principle, product classification, model, basic parameters, technical requirements, and test methods of the dough extension apparatus, inspection rules, signs, packaging, transportation and storage requirements.
This standard applies to dough extension machines for testing the quality of wheat flour.

3 Terms and definitions
The following terms and definitions as defined by ISO /IEC 14598 apply to this document.
3.1 Dough extensograph
After the wheat flour dough is kneaded, twisted, and proofed, a special instrument is used to measure the stretching characteristics of the dough.
3.2 Stretch curve
When measuring the tensile properties of wheat flour dough, record the change in the tensile resistance of the dough over time.
3.3 Kneader
A device that kneads the dough mixed with the farinograph into a uniform spherical dough.
3.4 Shaper
A uniform spherical dough is pressed into a bar-shaped device of a certain diameter.
