Scope

GB/T 5531-2018 is the English-translated version of 粮油检验 植物油脂加热试验.

GB/T 5531-2018 describes the heating test for vegetable fats and oils used in Chinese grain and oil inspection. The sample is heated to 280 °C and examined for precipitates and for a change in colour: phospholipids decompose or precipitate at that temperature, so a darker oil and more precipitate or floc indicate poorer quality.

The standard covers terms and definitions, principle, instruments, sample preparation, operating procedure and the calculation and expression of results. It includes a visual method using an adjustable 1000 W electric furnace, a sand bath or asbestos gauze, a 100 mL beaker, a thermometer and an iron support stand.

It applies to vegetable oils and is used by oil processors and grain and oil testing laboratories. It replaces GB/T 5531-2008, was issued on 6 February 2018 and has applied since 1 September 2018.

Foreword

This standard was drafted in accordance with the rules given in GB/T 1.1-2009.

This standard replaces GB/T 5531-2008 "Grain Oil Inspection Vegetable Oil Heat Test".

The main changes of this standard compared with GB/T 5531-2008 are as follows.

--- Increased visual inspection (see Chapter 5);

--- Modified sample color measurement after heating (see 6.3.3, 2008 version 7.3);

--- Added results calculation (see 6.4).

1 Scope

This standard specifies the terms and definitions, principles, instruments and tools for the determination of vegetable oil heating test, sample preparation, operating procedures, and procedures. Calculations and presentations, etc.

This standard applies to vegetable oils.

2 Normative references

The following documents are indispensable for the application of this document. For dated references, only dated versions apply to this document. For undated references, the latest version (including all amendments) applies to this document.

3 Terms and Definitions

The following terms and definitions apply to this document.

3.1 Heating test

When the sample was heated to 280°C, a test was made to see if there were any precipitates and changes in the color of the oil.

4 Principle

Phospholipids in vegetable oils decompose or precipitate at a high temperature of 280°C, making the oil darker and darker and producing precipitates or flocculations.

Physical phenomena, which determine the quality of vegetable oils. Usually the oil becomes deeper and darker, and more precipitates or floc-like precipitates indicate the quality of vegetable oils The worse.

5 Visual method

5.1 Instruments and Apparatus

5.1.1 Electric furnace. 1000W adjustable electric furnace.

5.1.2 Metal discs (sand trays) or asbestos webs filled with fine sand.

5.1.3 Beaker. 100 mL.

5.1.4 Thermometer. 0°C~350°C, ±2°C.

5.1.5 Iron prop frame.

5.2 Operation method

Take about 50 mL of the mixed sample and inject it into a 100 mL beaker (5.1.3). Observe the color of the sample. Place the sample on a metal tray (sand bath).

Heat the pan (5.1.1) or asbestos mesh (5.1.2) on the electric furnace (5.1.1) and hang the thermometer (5.1.4) with the iron support (5.1.5) so that the mercury ball is in the sample […]
