1 Scope

This document specifies the technical requirements and inspection rules for dough rollers (referred to as rollers), defines the relevant terms and definitions, and describes

The structure of the rolling mill, verification of measures and related hazards in different areas are described, and information on usage is given.

This document applies to roller mills used in food establishments (confectionery, bakery, sweet shop, delicatessen, catering, etc.).
