Foreword

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for Standardization Work Part

1.Structure and Drafting Rules of Standardization Documents" drafted. This document replaces GB/T 13212-1991 "Canned water chestnuts in water", compared with GB/T 13212-1991, except for structural adjustment and editing In addition to the sexual changes, the main technical changes are as follows:

--- Changed the scope of application of the standard (see Chapter 1, Chapter 1 of the.1991 edition);

--- Changed terms and definitions (see Chapter 3, Chapter 3 of the.1991 edition);

--- Changed the description of diced water chestnuts (see 4.1.1,

3.7 of the.1991 edition);

--- Changed the classification and code of the product (see Chapter 4, Chapter 4 of the.1991 edition);

--- Changed the diameter of water chestnut raw materials in the requirements for raw and auxiliary materials (see 5.1,

5.1 of the.1991 edition);

--- Change the product quality grade to superior product and qualified product (see 5.2,

5.2 of the.1991 edition);

--- Add the requirement of "no foreign impurities" in the sensory requirements (see 5.2);

--- Changed the product solid content requirements (see 5.3.2,

5.3.2 of the.1991 edition);

1 Scope

GB/T 13212-2022 is the Chinese national standard on general quality requirements for canned water chestnuts, in the field of food technology. The /T suffix marks it as a recommended standard: it is not compulsory by itself, but it becomes binding as soon as a contract, a tender or a customer specification calls it up - which in practice is how most foreign buyers meet it. It was issued on 14 October 2022 by the State Administration for Market Regulation; Standardization Administration of China, and has been in force since 1 May 2023. This document specifies the code, requirements, inspection rules and signs, packaging, transportation and storage of canned water chestnuts, gives the product classification, describes the experiment method. This document is applicable to canned food made of water chestnuts as raw material after pretreatment, canning, adding soup, sealing, sterilization and cooling.

3 Terms and Definitions

The following terms and definitions apply to this document.

3.1 red heart browning/discolouration The central part of the water chestnut has a distinct red color.
