GB/T 29392-2026 is the English-translated version of 畜禽肉质量分级 牛肉.

GB/T 29392-2026 is the Chinese national standard covering how beef is graded - the marbling, the meat and fat colour, the maturity of the carcass and the conformation, which together set the grade and therefore the price. It replaces GB/T 29392-2022 after only four years, which for a grading standard means the market it serves has moved. In force from 1 December 2026. This document complies with the provisions of GB/T 1.1-2020 "Standardization Work Guidelines Part

1.Structure and Drafting Rules of Standardization Documents". Drafting. This document replaces GB/T 29392-2022 "Grading of Livestock and Poultry Meat - Beef". Compared with GB/T 29392-2022, except for structural adjustments... Aside from integration and editorial changes, the main technical changes are as follows:

1.Scope This document establishes the grading principles for beef carcasses and their cuts, and specifies the grading index assessment, quality grade assessment, and labeling. And record requirements. This document applies to the carcass and cut meat quality grading of beef cattle (excluding yaks, buffalo, and calves).

4 Grading Principles

4.1 The principle of classification before grading is to divide beef into lean and fatty types, and then conduct quality grade assessments for each type.

4.2 The principle of overall consistency between carcass and cut meat grades, that is, the quality grade of the carcass (including halves, quarters, etc.) determines the quality grade of the corresponding cut meat. The grade is determined by the lean portion of fatty beef (i.e., cuts other than those specified in 6.2.2) and is graded according to the lean beef category.

5 Grading Indicator Assessment

5.1 Evaluation Criteria After a carcass that has passed inspection and quarantine is cut open at a designated location and exposed to air for 30 minutes, it is then irradiated with white light of not less than 660 lx. The evaluation shall be conducted under clear conditions.

6.1 Quality Grading of Lean Beef

7.1 The quality grade marking of carcasses and cut meat shall be implemented in accordance with the provisions of Appendix E.
