Scope

GB 2711-2003 is the English-translated version of 非发酵性豆制品及面筋卫生标准.

GB 2711-2003 is the mandatory hygienic standard for non-fermented bean products and gluten, setting indicator requirements, rules on food additives, hygienic requirements for production and processing, packaging, labelling, storage and transport, and test methods.

It applies to tofu made from soybeans or other beans, to marinated, fried-and-marinated, smoked and dried bean products, and to gluten made from wheat.

Products must show normal colour, aroma, taste and texture, contain no more than 0.5 mg/kg total arsenic and 1.0 mg/kg lead, and meet microbiological limits of 100 000 cfu/g (bulk) or 750 cfu/g (prepackaged) total colony count and 150 or 40 MPN/100 g coliforms, with no Salmonella, Staphylococcus aureus or Shigella; additives follow GB 2760 and processing GB 14881, and testing uses GB/T 5009.51 and GB/T 4789.23.

It replaces GB 2711-1998, restructuring the text to GB/T 1.1-2000, adding additive, processing, packaging, labelling, storage and transport requirements, and dropping the separate factory and retail microbiological limits for bulk products.

Foreword

The whole text of this standard is mandatory.

This standard replaces GB 2711-1998 Hygienic standard for non-fermented bean products and gluten.

Compared with GB 2711-1998, the main changes in this standard are as follows:

- the format of the text of the standard has been revised in accordance with GB/T 1.1-2000;

- the structure of the original standard has been revised, and hygienic requirements for food additives and the production and processing process, and requirements for packaging, labelling, storage and transport have been added;

- the classification of the microbiological indicators for bulk products in the original standard according to leaving the factory and sale has been abolished.

GB 2711-1998 is withdrawn from the date of implementation of this standard.

This standard was proposed by and is under the jurisdiction of the Ministry of Health of the People's Republic of China.
