GB/T 42120-2022 is the English-translated version of 冻卷羊肉.
GB/T 42120-2022 is the Chinese national product standard for frozen mutton roll.
It specifies the classification and specifications, the technical requirements and the labelling, packaging, storage and transport requirements, and describes the test methods and inspection rules; clause 1 applies it to frozen rolled mutton processed from lamb and large mutton, with frozen brick mutton taken as a reference.
The product is defined as sheep carcass or carcass parts deboned, divided and trimmed, shaped into a column, packaged and frozen for storage, and the classification starts from the carcass part used, with the whole lamb roll made from the whole carcass and the lamb chop roll from the part between the first and the last pair of ribs. 1 Scope
This document specifies the classification and specifications, technical requirements, labeling, packaging, storage and transportation requirements of frozen rolled mutton, and describes the frozen rolled mutton Test methods and inspection rules.
This document is applicable to frozen rolled mutton processed from lamb and large mutton. Frozen brick mutton is used as reference.

3.1 Frozen mutton roll
The sheep carcass or different parts of the carcass are deboned, divided and trimmed, processed and shaped into a column, and frozen for storage after packaging.
4 Classification and specification
4.1 Classification
4.1.1 According to the carcass parts of raw materials, the products are divided into.
a) Whole lamb roll. a product processed from whole lamb carcass;
b) Lamb chop meat roll. a product processed from the body parts of the lamb carcass between the first pair of ribs and the last pair of ribs;
