Scope
GB/T 40466-2021 is the English-translated version of 畜禽肉分割技术规程 猪肉.
GB/T 40466-2021 is the Chinese code of practice for cutting pork carcasses into parts.
It covers the terms and definitions used in pork cutting, the requirements for the raw material, the basic requirements for the cutting workshop, the cutting methods, the cutting procedures and their requirements, and the labelling, packaging, storage and transport of the cut meat.
It applies to the cutting and processing of fresh and frozen pork. The document builds on the pork product standards of the GB/T 9959 series, on the meat terminology of GB/T 19480 and on the good production practice of GB/T 20575, and adds its own terms for cuts such as the pork knuckle, the pelvic bone and the fibular spine.
It is intended for slaughterhouses and meat processors. It was issued on 20 August 2021 and has applied since 1 March 2022.

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for Standardization Work Part 1: Structure and Drafting Rules of Standardization Documents" Drafting.
1 Scope
This document specifies the terms and definitions of pork segmentation, raw material requirements, basic requirements for segmentation workshops, segmentation methods, segmentation procedures and requirements, Labeling, packaging, storage and transportation requirements.
This document is applicable to the division and processing of fresh and frozen pork.

3 Terms and definitions
GB/T 9959.1, GB/T 9959.2, GB/T 9959.3, GB/T 19480 and the following terms and definitions apply to this document.
3.1 Pork scapular bone with meat
With pork shoulder blades.
3.2 Ingot meat
The quadriceps of the pig's hind legs.
3.3 Wishbone; trigeminal
The hip bone of a pig.
3.4 Fibular spine
The part of the spinous process cut from the front row or spine of a pig.
