Foreword

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for standardization work Part

1.Structure and drafting rules for standardization documents" Drafting is required. This document replaces GB 17988-2008 "Safety and Hygiene Requirements for Tableware Disinfection Cabinets". Compared with GB 17988-2008, In addition to the integration and editorial changes, the main technical changes are as follows:

a) Deleted the contents related to electrical safety (see Chapter 7 to Chapter 31 of the.2008 edition);

b) The terms "normal operation" and "operating cycle" (see

3.109 of the.2008 edition) have been deleted, and the terms "disinfection effect" and "anti- "anti-bacteria", "mildew prevention", "cleaning function", "dryness index", "odor removal" (see 3.9, 3.12, 3.14, 3.15, 3.16);

c) Added health and safety requirements (see 4.1);

d) Added optional functions (see 4.3);

e) Changed the labeling requirements for disinfection effect levels (see A.2, AA.1.2 of the.2008 edition);

f) The "Disinfection Effect Microbial Killing Test Method" has been changed (see Appendix C, Appendix BB and Appendix CC of the.2008 edition);

g) Added "Test method for cleaning function" (see Appendix D);

h) Added "Drying function test method" (see Appendix E);

i) Added "Specifications and Quantities of Tableware" (see Appendix H). Please note that some of the contents of this document may involve patents. 1 Scope

GB/T 17988-2024 is the Chinese performance standard for tableware disinfection cabinets, the heated or ultraviolet cabinets that are a standard kitchen appliance in China and almost unknown elsewhere. Because the whole purpose of the appliance is a microbiological claim, the standard is built around proving it: the classification of the cabinets by disinfection principle and by grade, the requirements on the disinfection performance expressed as the log reduction achieved against the specified test organisms and the position within the cabinet at which it must be achieved, which is the part that separates a working cabinet from one that only heats the front, the temperature and time or the ultraviolet dose delivered, the drying performance, the energy consumption, the noise, the requirements on the controls and the safety interlocks and on ozone where it is generated, together with the test methods including the microbiological procedure, the marking and the instructions. The 2024 edition replaces GB/T 17988-2008 and takes effect in September 2026.

This document specifies the health and safety, disinfection, antibacterial, anti-mildew, cleaning and drying functions of tableware disinfection cabinets (hereinafter referred to as "disinfection cabinets"). The technical requirements, as well as the disinfection effect classification and marking requirements, describe the corresponding test methods. This document applies to single-phase appliances with a rated voltage not exceeding 250 V and other appliances with a rated voltage not exceeding 480 V, used in households and similar places. Physical or chemical disinfection methods such as electric heating, ozone, ultraviolet radiation (only as an auxiliary) using electricity as the main energy source, and Disinfection cabinets that combine the above disinfection methods. Other utensils with tableware disinfection functions shall be implemented in the same way. This document does not apply to the following disinfection cabinets. --Disinfection cabinets that disinfect only by ultraviolet radiation; --Disinfection cabinets that are not used primarily for disinfecting tableware, such as towel disinfection cabinets; --Disinfection cabinets installed in special occasions, such as places where corrosive or explosive gases (dust, steam or gas) exist; --Disinfection cabinets for medical and sanitary purposes.

3 Terms and definitions

The following terms and definitions apply to this document.

3.1 Disinfecting of tableware The process of killing or removing pathogenic microorganisms remaining on washed tableware to render it harmless.

3.2 Disinfecting tableware cabinet A device with one or more compartments for placing tableware, which uses physical or chemical methods, or a combination of methods to disinfect tableware. [Source: QB/T 5893-2023, 3.1]
