GB/T 36187-2024 is the English-translated version of 冷冻鱼糜.

GB/T 36187-2024 is the Chinese standard for frozen surimi, the washed and cryoprotected fish paste from which fish balls, imitation crab stick and a great many other products are made. China is the largest producer and consumer of it, and the trade runs on grades that have to mean the same thing to both parties, because the property that determines the value, the gel strength the paste will develop when cooked, cannot be judged by eye. The standard sets the classification and the grades, then the requirements: the sensory characteristics, the physical and chemical indicators including the moisture, the pH, the impurity count and above all the gel strength and the whiteness, the limits on contaminants and on microbiological indicators, and the requirements on the raw fish and on the food additives permitted. It then gives the test methods, notably the standardised preparation and testing of the gel, the inspection rules and the labelling, packaging, transport and cold storage requirements. It takes effect on 1 April 2025.

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for standardization work Part

1.Structure and drafting rules for standardization documents" Drafting is required. This document replaces GB/T 36187-2018 "Frozen Surimi". Compared with GB/T 36187-2018, except for structural adjustments and editorial changes, In addition to the modifications, the main technical changes are as follows: The raw materials and excipients have been changed (see 4.1,

This document has many technical differences compared to ISO 23855.2021. A summary of these technical differences and their causes is given in Appendix B. The following editorial changes were made to this document. 1 Scope
