Foreword

This document complies with the provisions of GB/T 1.1-2020 "Standardization Work Guidelines Part

1.Structure and Drafting Rules of Standardization Documents". Drafting. This document replaces GB/T 21122-2007 "Nutritional Fortified Wheat Flour". Compared with GB/T 21122-2007, the main differences are structural adjustments and compilation. Aside from the logical changes, the main technical changes are as follows:

---The scope of application has been changed (see Chapter 1, Chapter 1 of the.2007 edition);

---The definition of fortified wheat flour has been changed (see 3.1,.2007 edition 3.1);

---The content related to the use of food fortifiers and food additives has been deleted (see Chapter 4 of the.2007 edition);

---The classification and ranking have been changed (see Chapter 4, Chapter 5 in the.2007 edition);

---Added raw material requirements (see 5.1);

---The quality requirements have been revised (see 5.2,

6.1 in the.2007 version);

---The requirements for the uniformity of mixing of nutrient fortifiers have been changed (see 5.3,

6.2 in the.2007 edition);

---Health indicators have been removed (see section

6.4 of the.2007 edition);

---The testing method has been changed (see Chapter 6, Chapter 7 in the.2007 edition);

1 Scope

GB/T 21122-2025 is the Chinese national standard covering flour with vitamins and minerals added - the nutrients and their addition levels, the uniformity of the premix through the flour stream, the stability through storage and baking, and the labelling of what has been added. It replaces GB/T 21122-2007, under the National Food and Strategic Reserves Administration. In force from 1 May 2026. Issued on 31 October 2025, it has been in force since 1 May 2026, replacing GB/T 21122-2007.

This document defines the terminology and definitions for fortified wheat flour, and specifies its classification and grading, technical requirements, inspection rules, labeling, and marking. The document covers identification, packaging, storage, and transportation, and describes the inspection methods. This document applies to fortified wheat flour for food products.
