Scope

GB 14891.6-1994 is the English-translated version of 辐照猪肉卫生标准.

GB 14891.6-1994 is the Chinese mandatory hygienic standard for irradiated pork, part of the GB 14891 series on irradiated foods.

It specifies the technical requirements and test methods for Trichinella-infested pork irradiated with Co-60 or Cs-137 gamma-rays or with electron beams below 10 MeV, where the infestation density does not exceed 5 encysted or calcified larvae in 24 meat-slice specimens.

The overall average absorbed dose is set at 0.65 kGy with uniform irradiation; sensory and physical-chemical indicators follow GB 2722, and after irradiation the Trichinella must be inactivated and unable to develop into adult worms in the animal intestine.

A supplementary annex gives the test method: pepsin digestion of 50 g of muscle to recover the larvae, followed by a mouse bioassay with examination of the small intestine.

Issued on 2 February 1994, in force since 1 July 1994; first edition. Classification: CCS C 53. The document runs to 3 pages, delivered complete in English translation.

1 Subject content and scope of application

This standard specifies the technical requirements and test methods for irradiated Trichinella-infested pork.

This standard applies to Trichinella-infested pork irradiated with gamma-rays or electron beams (with an infestation density of not more than 5 encysted or calcified Trichinella larvae in 24 meat-slice specimens).

3 Technical requirements

3.1 Dose limit

For Trichinella-infested pork irradiated with Co-60 or Cs-137 gamma-rays, or with electron beams of less than 10 MeV produced by an electron accelerator, the overall average absorbed dose is 0.65 kGy.

3.2 Irradiation principle

Irradiation shall be uniform, and the dose shall be reliable and accurate.

4 Sensory indicators

In accordance with GB 2722.

5 Physical and chemical indicators

In accordance with GB 2722.

6 Parasite indicators

After irradiation the Trichinella in the pork shall be inactivated and shall be unable to develop into adult worms parasitising the intestine of animals.

7 Test methods

Testing of irradiation-inactivated Trichinella in pork is carried out in accordance with Annex A (supplementary).

Annex A (supplementary) Test method for Trichinella in irradiated pork

Test method for Trichinella inactivated by irradiation in pork.

A1 Reagent

1% pepsin digestion solution: take 10 g of pepsin powder (activity 3000:1), 10 mL of concentrated hydrochloric acid and 990 mL of distilled water, and mix well.

A2 Artificial collection of muscle Trichinella larvae

Take 50 g of irradiated pork (diaphragm, psoas or hind-leg muscle), mince it and place it in the digestion solution in the proportion 1 g : 20 mL. Keep it in a 37 °C incubator or water bath for 1 h to 2 h with continuous stirring. Allow to settle for 30 min, discard the supernatant and collect the muscle Trichinella larvae from the sediment.

A3 Mouse bioassay

A3.1 Infection of the mice

Administer the muscle Trichinella larvae collected as above to white mice by gavage, each mouse receiving not less than 30 muscle larvae.

A3.2 Examination of the small intestine

24 h after gavage, sacrifice the mice, remove the small intestine, cut it open longitudinally, prepare glass compression slides and examine them under the microscope for the presence of intestinal Trichinella.
