Scope

GB 13102-2022 is the English-translated version of 食品安全国家标准浓缩乳制品.

GB 13102-2022 is the Chinese national food safety standard for enriched dairy products, that is condensed milk and concentrated milk for the food industry. It defines condensed milk, evaporated milk and concentrated milk for the food industry, describing how each is made from raw cow or goat milk by removing part of the moisture.

It then sets the requirements for raw materials, the sensory requirements, the physical and chemical indicators for evaporated and sweetened condensed milk and for formulated condensed milk, the limits for contaminants and mycotoxins, the microbial limits and the use of food additives and nutritional fortification substances.

It also requires condensed milk to carry a warning that it is not a breast-milk substitute for infants and young children. It replaces GB 13102-2010, was issued on 30 June 2022 and has applied since 30 December 2022.

Foreword

This Standard replaces GB 13102-2010, National food safety standard - Evaporated milk, sweetened condensed milk and formulated condensed milk.

Compared with GB 13102-2010, the major changes of this Standard are as follows.

-- Modify sensory requirements;

-- Modify physical and chemical indicators;

-- Modify microbial limits;

-- Refer to the provisions of GB 29921 for limit of pathogen directly;

-- Add corresponding indicators and requirements for concentrated milk for food industry.

1 Scope

This Standard applies to condensed milk and concentrated milk for food industry.

2 Terms and definitions

2.1 Condensed milk

Products made from raw cow (goat) milk by concentrating and removing part of the moisture, and/or products of the same ingredients and properties processed from dairy products, including evaporated milk, sweetened condensed milk, and formulated condensed milk.

2.1.1 Evaporated milk

Liquid products -- in the state of commercial sterility -- processed from raw cow (goat) milk and/or its products, with or without skim, with or without food additives and nutritional fortification substances.

2.2 Concentrated milk for food industry

Products used as raw materials for the food industry, with only raw cow (goat) milk as raw material, with or without skim, with only part of the moisture removed through concentration and other processes, including concentrated cow milk and concentrated goat milk.

3 Technical requirements

3.2 Sensory requirements

Sensory requirements shall be in accordance with Table 1.

3.3 Physical and chemical indicators

3.3.1 Evaporated milk and sweetened condensed milk shall meet the requirements in Table 2.

3.3.2 Formulated condensed milk shall meet the requirements in Table 3.

3.4 Maximum levels of contaminants and mycotoxins

3.5 Microbial limits

3.5.1 Evaporated milk and formulated evaporated milk shall meet the requirements of commercial sterility, and shall be inspected according to the method specified in GB 4789.26.

3.5.3 For the concentrated milk for food industry without heat treatment during processing, the microbial limit shall comply with the provisions of GB 19301.

3.6 Food additives and nutritional fortification substances

4 Others

4.1 Condensed milk shall be marked with "This product cannot be used as a breast milk substitute for infants and young children" or similar warnings.

4.2 Concentrated milk for food industry shall be stored and transported in a refrigerated or frozen state. […]
