Scope
GB/T 41811-2022 is the English-translated version of 魔芋凝胶食品质量通则.
GB/T 41811-2022 fixes the quality of konjac gel food, the jelly products made from konjac flour.
It sets the requirements - the raw materials, the sensory characteristics, the physical and chemical indicators, the limits on contaminants and additives and the microbiological limits - the test methods, the inspection rules and the provisions on marking, packaging, transport and storage.
It applies to the production, inspection and sale of konjac gel food, and not to bulk konjac tofu, to snow konjac nor to foods made using konjac gel as an ingredient.
Producers, retailers and food inspectors use it. Issued on 15 April 2022, it has applied since 1 November 2022.

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for Standardization Work Part 1: Structure and Drafting Rules of Standardization Documents" drafted.
1 Scope
This document specifies the requirements, test methods, inspection rules and marking, packaging, transportation and storage of konjac gel food.
This document applies to the production, inspection and sale of konjac gel food.
This document does not apply to bulk konjac tofu, snow konjac, and processed foods using konjac gel food as raw materials.

3 Terms and Definitions
The following terms and definitions apply to this document.
3.1 Konjacgelfood
Using konjac flour or fresh konjac and water as the main raw materials, with or without other food ingredients or food additives, after stirring, gelatinization, alkaline Under the conditions of heating gel curing, soaking, remodeling, packaging, sterilization and other processes, using the irreversible properties of konjac gel, processed food.
4 Requirements
