Scope

GB/T 40962-2021 is the English-translated version of 干鲍鱼.

GB/T 40962-2021 is the Chinese product standard for dried boiled abalone. It applies to dry products made from fresh or frozen abalone (Haliotis spp.) that has been shelled, gutted, cooked, dried and shaped.

The standard sets the requirements, including the water used in processing, which must meet GB 5749, and the sensory requirements for form, colour, smell and impurities, and it gives the test methods, the inspection rules and the rules for marking, packaging, transportation and storage.

Test methods refer to the national food safety standards for moisture and chloride, and sampling follows GB/T 30891-2014. Processors, traders and inspection bodies use it to judge the quality of the product. It was issued on 26 November 2021 and has applied since 1 June 2022.

1 Scope

This document specifies the requirements, test methods, inspection rules and markings, packaging, transportation and storage of dried abalone.

This document is applicable to fresh or frozen abalone (Haliotis Spp.) as raw materials, after shelling, gutting, cooking, drying, shaping, etc. Dry products made by craftsmanship.
