GB/T 39501-2020 — This standard gives instructions on quantitative response scales (here response refers to the intensity of perception) and guidelines for its use. This standard applies to all quantitative evaluations in sensory evaluation, whether it is for overall quantitative evaluation or for specific attributes. Evaluation, whether it is objective sensory evaluation or subjective preference sensory evaluation. The scales involved in this standard are measurement scales commonly used in sensory evaluation. Note the distinction between two common uses of the term "scale", namely the response scale (see 3.1) and the measurement scale (see 3.5). Note. Application examples are given in Appendix A.

1 Scope

This standard gives instructions on quantitative response scales (here response refers to the intensity of perception) and guidelines for its use.

This standard applies to all quantitative evaluations in sensory evaluation, whether it is for overall quantitative evaluation or for specific attributes.

Evaluation, whether it is objective sensory evaluation or subjective preference sensory evaluation.

The scales involved in this standard are measurement scales commonly used in sensory evaluation.

3 Terms and definitions

The following terms and definitions defined by ISO 5492 apply to this document.

3.1

Response scale

The evaluator's quantitative expression of the response intensity of the attribute in the form of numbers, words or pictures.

Note 1.In sensory analysis, the response scale is used to collect and record the evaluator's response to the attribute, and this response can be converted into a number for statistical analysis.

Note 2.In most cases, the term "scale" is used equivalent to "response scale".

The process of quantifying attributes.
