Scope

GB/T 23190-2025 is the English-translated version of 双孢蘑菇.

GB/T 23190-2025 is the Chinese national standard covering Agaricus bisporus graded for trade — the fresh mushroom and the partial veil that joins cap to stem while the mushroom is still closed, the dried product, the foreign matter, the moisture and ash determinations and the net content check, the sampling and the judgement rules that decide whether a lot passes, and the packaging, transport and storage. The salted product, the hygiene limits and the physico-chemical requirements of the 2008 edition are gone. It replaces GB/T 23190-2008, with the oyster mushroom standard GB/T 23189-2025. Under the All-China Federation of Supply and Marketing Cooperatives. In force from 1 January 2026. Issued on 30 June 2025, it has been in force since 1 January 2026, replacing GB/T 23190-2008.

Foreword

This document is in accordance with the provisions of GB/T 1.1-2020 "Guidelines for standardization work Part 1: Structure and drafting rules for standardization documents" Drafting.

This document replaces GB/T 23190-2008 Agaricus bisporus. Compared with GB/T 23190-2008, except for structural adjustments and editorial changes, In addition to the dynamic, the main technical changes are as follows.

a) Added the definitions of fresh Agaricus bisporus and dried Agaricus bisporus, and deleted the terms and definitions of grass-rotting fungi (see 3.4 and 3.5, 2008 Version 3.2);

b) Product classification has been deleted (see Chapter 4 of the 2008 edition);

c) The quality requirements for fresh Agaricus bisporus have been changed (see 4.1, 5.1.1 of the 2008 edition);

d) The quality requirements for dried Agaricus bisporus have been modified (see 4.2, 5.1.2 of the 2008 edition);

e) Deleted salted Agaricus bisporus (see 5.1.3 of the 2008 edition);

f) Deleted the physical and chemical requirements (see 5.2 of the 2008 edition);

g) Deleted the hygiene requirements (see 5.3 of the 2008 edition);

h) The determination methods of acidity and brine concentration have been deleted (see 6.1.4 and 6.1.5 of the 2008 edition);

i) Added the net content determination method (see 5.6);

j) Sampling has been changed (see 6.2, 7.2 of the 2008 edition);

k) The judgment rules have been changed (see 6.4, 7.4 of the 2008 edition);

l) The label has been deleted (see 8.2 of the 2008 edition).

3 Terms and Definitions

The following terms and definitions apply to this document.

3.1 An edible fungus of the genus Agaricus

Mushrooms belonging to the Basidiomycota, Agaricomycetes, Agaricales, and Agariceae families

3.2 Inner biofilm partialveil

A membrane connecting the cap and the stem of a mushroom.

3.3 foreign matters

All organic and inorganic substances except Agaricus bisporus.

3.4

Fresh Agaricus bisporus fruiting bodies that have undergone simple preservation treatment after harvesting.
