GB 1903.79-2025 is a mandatory national food safety standard for L-lysine L-aspartate as a nutritional fortifier. Lysine is an essential amino acid and the one most often limiting in cereal-based diets, which is why it is added to foods in populations that depend heavily on wheat, rice or maize. Free lysine, however, is hygroscopic and reactive: it takes part readily in the Maillard reaction, so it browns the product, develops off-flavours and, worse, destroys itself during processing and storage, meaning the label figure and the delivered amount diverge. Pairing it as a salt with aspartic acid - itself an amino acid - gives a stable crystalline material that survives processing and contributes a second amino acid rather than a counter-ion of no nutritional value. This standard applies to L-lysine L-aspartate as a food nutrition fortifier, produced by fermentation from starch or sugars, or by chemical synthesis from L-lysine or a lysine salt and L-aspartic acid.
