3 Terms and Definitions

The following terms and definitions apply to this document.

3.1 collagen

It is extracted from animal skin, bones, tendons, skeletal muscles, scales, body walls and their degradation products. It is insoluble in water, soluble in dilute acid, and has a triple helical structure. product of the structure.

3.2 collagen hydrolysate

Note. It can dissolve in water at room temperature but cannot form gel.
